| After bottling Schneider Weisse matures in special climate controlled chambers at strictly controlled temperatures in both bottles and kegs for many weeks. During this time, the fine top-fermenting yeast drops down to to the bottom of the bottle little by little, a sign for the special vitality and fermenting power of the yeast.. This costly and carefully enforced procedure guarantees the typical flavor and taste profile of Schneider Weisse and is therefore manageed by our brewmasters with much delicacy.

Georg I. |
| Schneider, Weissbierpioneer and founder (1817-1890) leased the royal 'Weisse Brauhuas' Hofbräuhaus in Munich in 1855 and purchased from King Ludwig II.the right to bew Wheatbeer in 1872.. He is responsible for the famous and jaleously protected recipe, after which the Schneider Weisse is still brewed today. The sale of wheatbeer through the royal brewpubs declined steadily during that time and nobody would have predicted a prosperous future for wheatbeer.. With his trailblazing spirit and entrepreneurial intuition, Georg I. believed in the Weissbier and is therefore entitled to be called the savior of the Bavarian wheatbeer culture. .

Georg II. |
| Schneider, merchant and brewer (1846-1890) managed together with his father Georg I the brewery. Along with his father he acquired the so-called Maderbräu Im Tal 10' in 1872. Renamed "Weisse Brauhaus" it is now one of the oldest traditional breweries in Munich.

Georg III. |
| Schneider, constructor and brewer (1870-1905) assumed the management of the Weisse Brauhaus at the tender age of 20 . In his short life, he dedicated his entire energy to the expansion and long-term success of the still very small brewery. In 1902, he had the entire brewpub including restaurant rebuild in the front part of the building complex , just like the visitor can see it today.

Georg IV. |
Schneider, engineer and brewer, (1900-1991). After World War I Dipl. Ing. Georg IV assumed the management of G.Schneider & Son and was able to add the Weisse Brauhaus in Straubing and Kelheim to his enterprise in 1927. With this acquistion the formerly royal Weisse Brauhaus Munich and Kelheim were reunited.
In 1944 he suffered from a very heavy stroke of fate: bombs destroyed the brewery in Munich. Then he determined to transfer the entire production of wheatbeer to Kelheim as the brewery in Kelheim remained unscathed in World War II. .

Georg V. |
| Schneider,graduated brewery-engineer and friend of the beautiful arts (born in 1928), lived after the following device: " Who does not build will eventually not brew any more". He therefore firmly advanced the extensive modernization and the extension of the Kelheim brewery in 1957. The long-standing values groomed from generation to generation were the building blocks for this reorganization.
