Kelheim at the Danube

Aventinus, the patron of our wheat-doppelbock, spread the lovable legend over Kelheim to be the oldest city in Bavaria. Although we cannot prove it Kelheim is nevertheless one of the oldest cities. In Bavaria. Ludwig I, duke of Wittelsbach, who initiated the expansion policy of the Wittelsbacher dynasty was murdered in Kelheim on September 15, 1231. He is therefore also called the "Kelheimer" . During the Oktoberfest of 1842 King Ludwig I laid the foundation-stone for the liberation hall atop the Michelsberg on October 19, 1842.

There are also good manners associated with the enjoyment of wheatbeer: only clink the wheatbeer glass at the bottom when drinking at someone's health. Historically correct (before 1970) wheatbeer was drunk in the following way: No yeast was poured into the glass and a slice of lemon was added to vary the flavor profile. Today the true connoisseur avoids the addition of lemon as it destroys the beautiful white head. Health sensitive people insist on squeezing as much yeast out of the bottle as possible to enjoy the benefits of the vitamines B6 and B12.

Kraeusen

are called the yeast cells that rise to and gather at the top during fermentation. The "Kräusen" are scooped manually at our brewery.
