1. What distinguishes Schneider Weisse from other wheat beers?

Our amber-coloured Schneider Weisse Original is said to be an inexplicable and at the same time fascinating experience as regards taste. Maybe the reasons are that

  • … we have been brewing beer since 1872 specializing in wheat beer from the very beginning.
  • … we still make use of the traditional process of fermentation as the most important quality feature: the main fermentation in the open vessel and the following genuine bottle fermentation. It is true that this method is very expensive, but on the other hand it gives our wheat beer specialities an unmistakable nature with a rich flavour and sparkling freshness - both can be tasted, experienced, enjoyed.
  • … we still brew in accordance with traditional craftsmanship: unfiltered, unpasteurized, simply natural.
  • … we decided: quality is more important than quantity. These two things are very often incompatible especially in the production of such a sensitive food as beer.
  • … in the sixth generation we guarantee with our name of Schneider for the high quality of our wheat beer specialities.

4. Quality feature open fermentation and following bottle fermentation - how does it?
The main fermentation of Schneider Weisse proceeds in open vessels instead of closed tanks. It is true that the latter costs less. But closed tanks affect the taste adversely. In our process of fermentation the yeast gets air, a lot of air. Only that way a harmonic-spicy flavour can develop. A flavour typical of Schneider Weisse. At the end of the main fermentation, the top-fermenting yeast rises, as the name suggests. In contrast to many other breweries, it is skimmed off very carefully by hand. Afterwards the genuine bottle fermentation proceeds.

It is a very costly method, which is also used in the production of champagne. Only few breweries practise it. During this second maturation which lasts for three weeks, the valuable yeast by and by settles at the bottom. At the same time the amount of carbon dioxide increases. The bottle fermentation creates fresh, aromatic, beer with a clear note of the top-fermenting yeast. Thus, Schneider Weisse gets its typical, complex and mild taste.

  

5. What exactly do you mean when talking about "natural beer specialities"?
On the one hand we do not pasteurize our beer. Thus we get a beer speciality with healthy, vital yeast, keeping it fresh for a long time. On the other hand our wheat beer is not filtered. Thus, all natural contents remain and form the rich taste and full body. All our wheat beer specialities are natural - you can taste it!

  

6. You emphasize the permanently high quality of Schneider Weisse specialities. Can you prove it?
Being able to produce beer of a stable high quality is indeed "the art of brewing". Today we brew with a competence and experience of no less than 130 years in wheat beer production. Our brewers stand any comparison. For years we have been taking part in important competitions. During all this time, numerous national and international awards regularly confirm the high quality standard of our wheat beer specialities. But the best confirmation is the one we get from our customers. Therefore we are proud that the number of Schneider Weisse friends continuously increases. Meanwhile you can enjoy our specialities in Bavaria, Germany and another 27 countries all over the world.

  

7. Why is Schneider Weisse often called "the mother of all wheat beers"?
The founder of our brewery, the royal-Bavarian master brewer Georg Schneider I purchased the right to brew wheat beer from the fairy-tale king Ludwig II. Originally, brewing of top-fermented wheat beer had been a privilege of the Bavarian rulers. But in the last decades of the 19th century wheat beer had become out-of-fashion with beer drinkers. The king - "Kini" - was glad to find a buyer for the wheat beer production that had caused him heavy losses. Thus Georg Schneider I saved the wheat beer culture in the late 19th century, and with his first Schneider Weisse he brewed "the mother of all wheat beers". We proudly continue this tradition. This is the reason why we did not change the original brewing process. Now as before we brew natural wheat beer specialities.

  

8. Which Georg Schneider is running the brewery at present?
Georg Schneider VI entered the family business in 1992 and in 2000 he took over the sole management of the private wheat beer brewery G. Schneider & Son.

  

9. Who is actually behind "Schneider Weisse"?
The brewery has always been in the hands of the Schneider family. Also in the future it will remain a independent Bavarian, family-owned brewery, independent of groups. It was founded in 1872 by Georg Schneider I, the great-, great-, greatgrandfather of the present-day manager Georg Schneider VI. The brewery bears the name "Weisses Bräuhaus G. Schneider & Sohn GmbH".

  

10. I am interested in learning how Schneider Weisse is brewed. Do you offer guided tours?
Yes, our charming colleagues will be pleased to show you our brewery and its museum in Kelheim. At the end of the tour, you can even bottle some beer yourself in the traditional way. You get the guidelines from our brewmaster, Hans-Peter Drexler on how to mature your Schneider Weisse in the bottle at home. Our eventful guided tours are held every Tuesday, at 2 pm, from May - November also every Thursday, at 2 pm. Special tours can be arranged for groups on weekdays. Although as a middle-class family business, we are "only" a comparatively small company we support specific regional activities in the fields of culture and sports. We are planning several years in advance. That’s why we cannot consider extraordinary requests.
